Biscuits. There’s plenty of debate about what makes the best biscuits. We set out to make a good base for which any modification can be made.
Ingredients:
- 2 cups flour (+ additional)
- 2 tablespoons sugar
- 1 teaspoon salt
- 4 teaspoons baking powder
- 1⁄2 teaspoon cream of tartar
- 1 stick butter (frozen)
- 1 cup milk (cold as possible)
Simple Procedure:
Mix all the dry ingredients. Cut the butter into small cubes. As a shortcut, you can use a cheese grater. Then add the butter and milk to the dry ingredients and bit just enough that it’s held together. Roll out to the desired size, folding over several times. Cut out with a cup or other cutter shape. Add to a greased sheet. Cook for ~15 minutes at 400. Remove once golden brown on top.

Things to consider before making biscuits. Put dry ingredients in a bowl and combine.
- Grate frozen butter in a bowl.
- Cut in butter until crumbly.
- Pour in milk and stir quickly to combine (dough should be soft).
- Turn out on a lightly floured surface.
- Knead gently 8-10 times.
- Roll or pat 1/2 to 3/4 inch thick or half the thickness you want the baked product to be.
- Cut with a small round cookie cutter.
- Place on a greased cookie sheet close together for soft sides or apart for crisp sides.
- Bake in a 400 degree oven for ~16 minutes.
- Brushing biscuits with milk or unsalted butter before baking will produce a browned top.
Tips:
If using a dark pan/sheet, try cooking at 375!
